This is a really good recipe if you need a "quick" meal one night that doesn't require a lot of dishes. I love making it for dinner and having leftovers for breakfast for the next few days. I serve it with fruit.
6 slices of wheat or white bread torn into bite-size pieces
1 lb. bulk sausage, cooked, drained
1 cup shredded cheese (I use cheddar or Colby Jack)
7 eggs
2 cups milk
1 tsp. salt
1/4 tsp. pepper
1 green onion (optional)
Preheat oven to 350 degrees F.
Scatter torn bread into a single layer in the bottom of a 9x13 baking dish sprayed with non-stick spray. Top bread with sausage. Sprinkle cheese over sausage.
Beat eggs, milk, salt and pepper with whisk until well blended; pour over ingredients in pan.
Top with chopped green onion. (I find that kitchen shears are the best tool for this.)
Bake 40-45 minutes or until casserole is set in center and top is lightly browned.
**Note, if the top is brown, but the center is not set, cover with foil and continue baking.**
